The washed process, also called wet processing, removes all fruit from the bean before drying. After pulping, beans ferment in water tanks for 12-48 hours to break down the mucilage, then are thoroughly washed and dried. This meticulous process produces the cleanest, most transparent flavor profile—allowing the bean's inherent characteristics and terroir to shine through with bright acidity and floral notes. It's the preferred method for showcasing a coffee's true origin character.

Pacamara is a rare hybrid varietal developed in El Salvador in 1958, combining Pacas (a Bourbon mutation) with Maragogipe (known for its exceptionally large beans). This coveted cultivar produces some of the largest coffee beans in the world and is prized for its exceptional cup quality, often scoring highly in competitions. Pacamara is known for producing intense floral and citrus notes with remarkable clarity and complexity, making it a favorite among specialty coffee enthusiasts.
