This lot from Julid Madrid is a true masterclass in experimental coffee processing. Grown at Finca Milan in Pereira, it is pushed through a nitro-charged wash with an infused watermelon coferment. The result is sweet and bright coffee that produces notes of watermelon, Jolly Rancher and cantaloupe.

Nitro Washed with Infused Coferment (Watermelon)

Coffee cherries ferment in a nitrogen-flushed, oxygen-free tank alongside watermelon, allowing the fruit's sugars and aromatics to fold into the bean during processing. The result is an intensely fruited cup with candy-like sweetness up front.
