PROCESS
Passion Fruit & Mossto Coferment

A two-stage anoxic fermentation—first with watermelon and coffee mossto, then with passion fruit after depulping. The coffee dries for 26 days on raised beds as a honey process. The result is intense, candy-like fruit flavors with a clean finish.
